Kale Salad Recipe

This is a simple and delicious salad packed full of vitamin C, vitamin A fiber, and flavor. Great served with most meals including soup, bean & lentil dishes or alongside chicken, fish, or lean beef. 

Ingredients 
  • 1 Bunch Kale
  • 1 Lemon
  • 1⁄4 Cup Extra-Virgin Olive Oil
  • 1⁄2 Tsp Fine Sea Salt
  • 1⁄2 Cup Toasted Pine Nuts or Pecans
  • 1⁄2 Cup Dried Cherries

Instructions

Combine lemon juice, olive oil & salt. Toss with nuts, fruit & kale. Chill 15-20 minutes (or more) Enjoy!

Notes
  • Can be made up to 4 hours in advance.
  • Must chill to soften kale and let the flavor infuse into the leaves. - Use organic ingredients when possible
  • Gluten Free & Dairy Free & Vegetarian
