The salad is tasty any time of the year, but it is especially enjoyable when you grow your own spinach and radishes. I’ve guided young and old through planting and harvesting their own veggies in their backyard or on their patio for this salad. It takes just 6 short weeks!
I scaled this recipe down from the original on the Earthbox.com website and tweaked it by adding more radishes and reducing the salt. It still makes enough to feed10 people or if you are a big entrée salad eater like me, you and 4 friends that eat like you, won’t go hungry. I also cut the dressing recipe in half. Use as much or as little as you like and save the rest for next time.

Whisk together oil, lemon juice, mustard, garlic, salt and pepper. Wash and spin dry torn spinach leaves. Add slice radishes and toss with dressing. Add Swiss cheese and toss again. Serve.
Notes
Dressing also makes a great marinade for beef or a dip for fresh cut veggies. P.S. Kids like it too!

- 3 1/2 Tbsp lemon juice
- 1 1/2 Tbsp grainy mustard (not spicy mustard. kids don’t like spicy) 2 small cloves garlic minced
- 1/2 tsp salt

- 10 radishes sliced thinly
- 1 1/2 cup shredded Swiss cheese (optional)
